But just when we’ve settled into comfortable
winter routines and the idea of fruit ripening on trees on the shortest days of the year
seems like an impossibility, some of the most
delicious citrus from California and Florida
starts to appear. The following recipes, which
each bring out the best of particular citrus
varieties, are sure to make you rethink the
notion that fruit-focused desserts are reserved for summertime.
MEYER LEMON SNOW BALLS
Makes about 3 dozen cookies
2 cups pecans
2 ½ cups all-purpose flour
2 tbsp fresh Meyer lemon zest
½ cup sugar
¾ cup unsalted butter, cold, cut in pieces
3 tbsp freshly squeezed Meyer lemon juice
1. Preheat oven to 300°F. Line 2 baking sheets with parchment
paper or silicone mats.
2. In a food processor, combine pecans and flour. Process until
pecans are finely ground. In a small bowl, rub Meyer lemon zest
into the sugar with your fingers. Add lemon sugar to pecan and
flour mixture. Pulse to combine.
3. Add butter and process until the butter is the size of small
peas. Add Meyer lemon juice 1 tbsp at a time, pulsing a few times
between each addition. Process until a ball begins to form and the
dough holds together when pressed between your fingers.
